Pink and moist
And rendolent with green essence of dill and salt from the sea.
Ever so very slightly sweet from sugar
Raw, unprocessed, nearly virginal
Marinated in aquavit
Having surpassed the moment when the salmon, still throbbing with life, leapt from the icy water.
Its life now in front of you,
On your plate,
With sublime grace, it submits itself to your grateful palate.
